Freshwater Feasts is a program of Michigan Sea Grant that helps individuals understand and appreciate seafood across the Great Lakes Region. In this session, Michigan Sea Grant curates a collection of short films that explain what aquaculture is, how it works, and some of the amazing products and recipes that can come from aquaculture. The session's final film is a fun amateur cooking competition where three individuals face off in a timed challenge to prepare the most stunning and accessible dish. Aquaculture is breeding, raising, and harvesting fish, shellfish, and aquatic plants. Basically, it’s farming in water. U.S. aquaculture is an environmentally responsible source of food and commercial products, helps to create healthier habitats, and is used to rebuild stocks of threatened or endangered species.

What is Aquaculture?

In this film Emma Wiermaa helps us understand the basic types of aquaculture systems and how they work. The film provides a basic overview of common aquaculture systems including ponds, raceways (flow-through), recirculating, and aquaponics. Some of the systems shown are those located at the University of Wisconsin Stevens Point Northern Aquaculture Demonstration Facility. Other commercial farms and facilities are also utilized to explain various systems, and are highlighted in the ending credits. Tim Campbell is an aquatic invasive species outreach specialist at Wisconsin Sea Grant. Eat WI Fish: Salmon BLT

Titus Seilheimer is a fisheries outreach specialist at Wisconsin Sea Grant. In this video produced for Eat Wisconsin Fish, he prepares a quick and versatile fish recipe. Says Titus, “With a few basic ingredients and tools, you can make a great fish dinner. I use the same basic preparation for different types of fish, and then adjust my cooking method depending on what I have available. The stovetop, oven and grill are all different sources of heat. Cooking with Chef Jeff: Smoked Salmon Dip

Watch as three Great Lakes area contestants face off in an exciting cooking challenge for the ages! Each contestant has hand picked a local aquaculture product to use and will have 20 minutes to cook and complete their dish. Each contestant will also have to incorporate a secret ingredient into their cuisine. Contestants will be cooking from their home kitchens as our hosts Titus and Elliot provide fun and engaging commentary during the competition.
